This dish reflects the island's agricultural heritage and is a staple at family gatherings and festive occasions. Today, Cou Cou is celebrated not only in Barbados but throughout the Caribbean, with variations incorporating different local ingredients.

Boil the pigtails in water for 45 minutes, pouring off the water three times to remove salt.
Boil the green bananas in their skin without adding salt or water until tender.
Peel the bananas after boiling and cut off the ends.
Sauté onion and garlic together in a pot.
Add green pepper and jalapeno peppers to the sautéed onion and garlic.
Season the mixture with paprika, seasoned salt, and black pepper.
Combine the sautéed mixture with the boiled pigtails and let them cook together for a while.
Prepare the barbecue sauce by mixing it with additional spices and flavors.
Spray the baking pan with olive oil to prevent sticking.
Brush the barbecue sauce mixture onto the pigtails and place them in the oven at 350°F to roast.
Once the green bananas are cooked, serve them with the pigtails and gravy.
