Get out a food scale and a small portable bowl or measuring cup.
Crack and add 1 large egg to the bowl.
Add 0.5 tablespoons (7 grams) of melted butter to the bowl.
Add 0.25 teaspoons of vanilla extract to the bowl.
Whisk the liquid ingredients until combined.
Add 0.25 cups (28 grams) of almond flour to the bowl.
Add 2 heaping tablespoons (20 grams) of confectioner's Swerve to the bowl.
Add 1 tablespoon (5 grams) of unsweetened cocoa powder to the bowl.
Add 0.5 teaspoons of baking powder to the bowl.
Use a spatula to mix everything until a thick chocolate batter forms.
Coat an 8-ounce ramekin with baking spray.
Add all of the batter to the ramekin if baking in the oven, or add two-thirds of the batter if microwaving.
Microwave the mug cake for around 20 seconds or bake in the oven at 350 degrees Fahrenheit for around 5 minutes.
In a small bowl, add 2 tablespoons (21 grams) of keto chocolate chips.
Add 0.5 teaspoons of unsweetened vanilla almond milk to the chocolate chips to help them melt.
After the initial cooking time, check the mug cake; it should hold the weight of the chocolate chips.
Cover the chocolate chips with the remaining batter.
Microwave the mug cake for another 20 seconds or until the center is slightly wet looking.
If baking, add the chocolate chips around 5 minutes into baking and gently press them into the center of the cake.
Bake for an additional 7 minutes after adding the chocolate chips.
To make a quick chocolate glaze, melt 1.5 tablespoons (14 grams) of Lilly's chocolate chips with 0.5 teaspoons of unsweetened vanilla almond milk in the microwave or on the stove.
Add the chocolate glaze to the top of the keto lava cake along with a small scoop of keto vanilla ice cream.
