Place a small amount of the filling on the lower third of the rice paper.
Fold the sides over the filling and roll tightly to form a cylinder.
Repeat with remaining rice paper and filling.
Heat oil in a deep pan over medium heat until shimmering.
Fry the rolls in batches until golden brown, about 3-4 minutes per side.
Remove from oil and drain on paper towels.
Serve with lettuce leaves and chili sauce for dipping.
