Trim off the rind of the pineapple by cutting off the leaf end and the stem end.

Set the pineapple on the cut edge and look for the eyes, cutting just inside of them to remove the skin.

Work your way around the pineapple, slicing inside the eyes and taking off the rest of the rind.

Secure the pineapple to the spit by driving the point of the spit straight down through the core.

Push hard to drive the spit all the way through the pineapple, then secure it with the first spit fork.

Attach the second spit fork from the other side to ensure the pineapple is tight on the spit.

Set the grill up for indirect high heat by removing the grill grates and attaching the rotisserie motor.

Plug in the rotisserie motor and set a drip pan on the burner covers in the center of the grill.

Turn on the outside burners to high and preheat the grill for 10 minutes.

Plug the point of the spit into the rotisserie motor and set the notch on the spit into the groove on the grill, then turn on the motor.

Close the lid and cook the pineapple for 30 minutes before checking on it.

Look for blackening around the edges of the pineapple; once seen, turn off the infrared rotisserie burner.

Leave the other two burners on for indirect medium heat and close the lid, cooking for another 15 to 30 minutes until browned all around.

Wear protective gear to handle the spit, which will be very hot.

Loosen the first spit fork and remove it from the spit, then loosen the second spit fork.

Use tongs to slide the pineapple off of the spit and slice it into half-inch thick slices.

Optionally, sprinkle with brown sugar or serve with vanilla ice cream.
