Originating from New Jersey, Crumb Buns are a beloved treat often enjoyed at breakfast or brunch. These moist, cake-like buns topped with a sweet crumb topping reflect the region's penchant for comfort foods. Today, they are popular across the United States, often served at family gatherings and coffee shops.
Start with 2.25 cups of all-purpose flour in a mixing bowl.
Add 0.75 cups of whole milk, 0.25 cups of sugar, 1 whole egg, 2.25 teaspoons of instant yeast, and 0.75 teaspoons of table salt to the bowl.
Stir the ingredients together to combine before mixing.
Mix on low speed for about 2 minutes until the dough comes together.
Add 6 tablespoons of butter, one tablespoon at a time, waiting for each to be incorporated before adding the next.
Increase the mixer speed to medium-high and mix for about 6 minutes until the dough is webby and gluten has developed.
Transfer the dough to a greased 9x13 baking dish using a greased spatula and hands dusted with flour to manage the sticky dough.
Cover the dish with plastic wrap and let it rise in a warm place for about 1 hour.
While the dough is rising, prepare the crumb topping by melting 18 tablespoons of unsalted butter.
In a bowl, combine the melted butter with 0.75 cups of dark brown sugar, 0.75 cups of white sugar, 1.5 teaspoons of cinnamon, and 0.5 teaspoons of salt, whisking until smooth.
Add 4 cups of cake flour to the mixture and stir until it resembles a cookie dough.
Let the crumb mixture rest for about 10 minutes to hydrate the flour.
Once the dough has risen, crumble pieces of dough into half-inch crumbles and sprinkle them over the risen dough.
Preheat the oven to 350 degrees Fahrenheit.
Bake for about 35 minutes, or until a skewer inserted into the center comes out clean.
Allow the baked crumb buns to cool completely for about 3 hours.
Use two spatulas to loosen the crumb buns from the pan and lift them out.
Cut the cooled crumb buns into 12 pieces using a long slicing knife.
Dust the pieces with powdered sugar using a fine mesh strainer.
