Mix together beef seasoning blend with salt, ground black pepper, garlic powder, onion powder, and smoked paprika. Set aside.
Create a binding layer with zero-carb flavored protein powder and xanthan gum.
Make the breading by mixing ground pork rinds, almond flour, grated Parmesan cheese, salt, and cayenne pepper in a separate bowl.
Prepare the egg wash by mixing together 2 beaten eggs and a little water.
Season the tops of the cubed steaks with the beef seasoning blend. Flip and season the bottoms as well.
Press and spread the protein powder mix over the top of each steak. Flip and repeat the process on the other side.
Use a flat plate to place a thin layer of breading over the top of the steak. Dip the steak into the egg wash, ensuring both sides are coated.
Place the steak on the plate with the breading mix, adding more breading over the top. Repeat the process with the other steaks.
Add about a fingernail's depth of oil to a frying pan on medium-high heat. Heat the oil above 330°F.
Gently add the steaks to the hot oil and let them cook for four minutes. Flip gently and cook the other side for an additional four minutes.
Use a spatula to remove the cooked steaks and place them on a paper towel-lined wire rack to drain. Store in a warm oven while preparing the gravy.
In a sauce pot on medium heat, add 2 cups of heavy cream and 4 tablespoons of unsalted butter. Whisk to combine.
Season the gravy with ground black pepper and salt, adjusting to taste. Add a pinch of leftover beef seasoning if desired.
Once the butter has melted, add xanthan gum and mix well. Continue to cook and stir until the gravy reaches the desired thickness, about five to seven minutes.
Plate the steak and add the cream gravy over the top.
