Add 0.5 cup of butter at room temperature into a large mixing bowl.
Add 0.5 cup of granulated sugar and 3/4 cup of lightly packed brown sugar to the bowl with butter.
Beat the butter and sugars together until creamy, scraping down the sides of the bowl as needed.
In a small bowl, beat 2 eggs with a fork until slightly beaten, then add 1 teaspoon of pure vanilla extract and mix well.
Add the egg and vanilla mixture to the butter and sugar mixture, starting on low and mixing until well blended, scraping down the sides of the bowl as you go.
In a separate bowl, combine 1.5 cups of all-purpose flour, 1 teaspoon of baking soda, 1 teaspoon of ground cinnamon, and 0.5 teaspoon of salt (if using).
Gradually add half of the flour mixture to the butter and sugar mixture, mixing until the flour is no longer visible.
Add the remaining flour mixture and mix until fully incorporated.
Add 3 cups of quick oats to the mixture and mix until well combined, ensuring no dry oats remain.
Add 0.5 cup of raisins, 0.5 cup of semi-sweet chocolate chips, and 0.5 cup of dried cranberries to the dough, mixing until evenly distributed.
Preheat the oven to 350°F (175°C).
Scoop approximately 1 tablespoon of cookie dough onto a parchment-lined baking sheet, spacing them apart.
Bake in the preheated oven on the middle rack for 8 to 10 minutes, or until the edges are golden.
Let the cookies cool on the baking sheet for 1 minute before transferring them to a cooling rack.
