Prepare the St. Louis ribs by removing the membrane from the back using a butter knife.
Apply a light coat of Dirty Bird dry rub evenly over the ribs.
Fire up the grill and ensure you have a small ball of coals lit.
Hang the ribs on the grill for about 1.5 to 2 hours to develop color.
After 1.5 to 2 hours, check the ribs for color and pull them off the grill.
Wrap the ribs in aluminum foil without any additional ingredients to keep the flavor of the glaze.
Return the wrapped ribs to the grill and cook for an additional hour to create a steam effect.
After 30 minutes, flip the ribs top to bottom to ensure even cooking.
After a total of 3 hours, check for doneness using a toothpick; it should slide in and out easily.
Let the ribs rest for about 5 minutes to stop the cooking process before slicing.
Slice the ribs from the back for straight cuts and apply Rib Blazers sauces for serving.
