Boil 2 pounds of fresh tomatoes in a large pot covered with cold water for about 10 minutes until tender.
Remove from heat and let cool, then blend the tomatoes in a food processor until smooth and strain to remove seeds and skin.
Chop 2 medium onions in a food processor until finely chopped.
Chop 4 stalks of celery and roughly chop 1/2 cup each of fresh cilantro and parsley, then blend with 1/2 cup water until finely chopped.
In a medium bowl, mix 4 tablespoons of flour with 1/2 cup water until smooth and lump-free.
In an 8-quart pot, heat 2 tablespoons of vegetable oil over medium heat and brown 1 pound of beef meat cubes for 5 minutes.
Add 1 and a half teaspoons of ghee butter (optional) and mix.
Add the chopped onions and mix well with the meat.
Add spices: 1 teaspoon black pepper, 1 teaspoon ground turmeric, 2 teaspoons salt, and crushed saffron threads, and mix everything together.
Add the chopped parsley, cilantro, and celery to the pot and mix well.
Add the tomato puree to the pot and mix to combine.
Cover the pot and cook for 5 minutes until boiling.
Add soaked chickpeas and mix, then cover and cook for another 5 minutes.
Add 6 cups of hot water to the pot and cover, cooking for 40 minutes until meat and chickpeas are tender.
Add 1 cup soaked lentils and cover, cooking for 15 minutes until lentils are tender.
Add 1/2 cup broken vermicelli to the pot.
Gradually add the flour mixture to the soup while stirring to thicken, cooking for an additional 10 minutes.
Turn off the heat and add 2 tablespoons chopped parsley and cilantro before serving.
