Add sugar and water to a clean pot on high heat.
Keep an eye on the mixture as it heats up.
Prepare muffin tins by lining them with foil and spraying them with cooking spray to prevent sticking.
Sprinkle nuts on the base of the muffin tins.
Once the sugar mixture starts to change color, lift it off the stove and swirl it to help the bubbles go down.
Pour the caramel into the molds over the nuts.
Place the molds in the fridge or freezer to set the caramel quickly and stop the cooking process.
After about 20 minutes, remove the praline from the fridge or freezer.
Gently fold back the foil to release the praline from the mold.
