Today, variations abound, with some adding nuts or using different types of chocolate, making them a beloved choice for cookie lovers everywhere.
Preheat the oven to 350°F.
Line an 11 by 17 inch cookie sheet with parchment paper.
In a stand mixer, add 1 tablespoon of coconut flour, 1/4 cup of honey, 2 eggs at room temperature, and 1 teaspoon of vanilla extract.
Using the paddle attachment, mix at low speed, then increase to medium for about 1 minute.
Scrape the bottom of the bowl with a spatula to incorporate any coconut flour that may have stuck.
Continue mixing for about 1 more minute.
Add the butter (at room temperature) to the mixture.
Add 1/2 teaspoon of baking powder to the flour, then gradually incorporate the flour into the mixture at low speed to avoid splashing.
Mix for about half a minute.
Add 1 cup of sweetened coconut flakes and increase the speed to medium.
Mix until the dough is completely incorporated and the bowl looks almost clean, then stop the mixer.
Place the dough on a clean, smooth surface and stretch it slightly, giving it a few folds.
Using an ice cream scooper with trigger release, grab about a tablespoon of dough and form a ball in your palm.
Repeat the process until you have formed about 20 cookie balls.
If some cookies look smaller, incorporate a little leftover dough to those cookies.
Bake the cookies in the preheated oven at 350°F for about 18 to 20 minutes, depending on your oven.
After baking, place the cookies on a cooling rack.
To melt the chocolate, add water to a pot (enough to partially submerge a bowl) and ensure the bowl touches the water without overfilling the pot.
Add the chocolate to the bowl and heat the water on medium to allow the chocolate to melt slowly.
Once melted, remove the bowl from the stove.
Prepare wax paper to place the cookies on after dipping.
Dip the bottom of each cookie in the melted chocolate and place on the wax paper.
Pour leftover melted chocolate into a sandwich bag, squeeze it to the bottom, and cut a tiny slit in one corner.
Decorate the cookies with the melted chocolate as desired, which can be a fun activity with kids.
Wait for the cookies to cool completely and for the chocolate to harden before serving.
