Preheat the oven to 350°F (175°C).
Wash and dry the taro leaves thoroughly.
In a bowl, mix coconut cream, chopped onion, minced garlic, grated ginger, and diced green chili.
Add vegetable broth and lime juice to the mixture and stir until combined.
Layer a few taro leaves on the bottom of a baking dish.
Spread a portion of the coconut mixture over the leaves.
Add chopped tomatoes, carrots, bell peppers, and spinach on top.
Cover with more taro leaves and repeat the layering process until all ingredients are used.
Seal the dish with foil to trap steam.
Bake for 45-60 minutes until the taro leaves are tender.
Remove from the oven and let it cool for a few minutes before serving.
