Chicken sausages are lower in fat, while pork sausages are often cheaper.
Start by introducing the recipe and the ingredients.
Use 2 classic pork sausages, one per person.
Peel and slice the shallots from the garden.
Heat a mixture of olive oil and butter in a pan to prevent the butter from burning.
Add the sausages and brown them on all sides.
Remove the sausages from the pan once browned.
Switch to a cast iron skillet and add more olive oil and butter.
Add a generous amount of shallots to the skillet and sauté until slightly softened, avoiding browning.
Pour in 25 cl of dry white wine and season with piment d'espelette and salt.
Increase the heat and let the wine reduce by half.
Preheat the oven to 200°C (about 400°F).
Once the wine has reduced, return the sausages to the skillet and turn off the heat.
Place the skillet in the oven for about 20 minutes, turning the sausages after 10 minutes.
After 10 minutes, remove the skillet from the oven to turn the sausages and add a small amount of hot water before returning it to the oven for another 10 minutes.
Once finished, serve the sausages on a bed of shallots.
