1

Add oil and diced onions to a pot on high heat.

2

Add Epis and mix well to combine, letting it sauté for a few minutes.

3

Add frozen lima beans and minced garlic to the pot.

4

If desired, add fresh thyme and about a teaspoon of adobo seasoning to help flavor the beans, then mix everything together.

5

Add two tablespoons of butter and mix again, stirring intermittently to prevent sticking.

6

Once the beans are sautéed, add a total of five cups of liquid (chicken broth and water) to the pot.

7

Add the packet of sazon and mix thoroughly.

8

Add salt to taste after sampling the liquid, then cover the pot to bring it to a boil.

9

Once boiling, add the rice (wash if necessary) and give it a quick stir.

10

Add additional Goya adobo and/or salt to taste if desired.

11

Stir every few minutes as the water reduces, but do not stir too frequently.

12

When the liquid has reduced about halfway, add the remaining two tablespoons of butter and decrease the heat to medium.

13

Once the liquid reaches the level of the rice, do a final mix and cover the pot with its lid.

14

Reduce the heat to low and let it simmer for about 15 to 20 minutes.

15

After about 20 minutes, check the rice and remove the sprig of thyme if used before serving.
