Return the strawberries to the fridge for about 5 to 10 minutes.
Add water to the pancake mix, ensuring it's a little thicker than the fill line.
Dip the chocolate-covered strawberries into the pancake batter, twisting off any excess.
Carefully lower the battered strawberries into hot oil and fry until golden brown.
Drain the fried strawberries on paper towels and let cool before serving.
Dust with powdered sugar or mix cinnamon sugar to sprinkle on top before serving.
