Nutritional yeast is lower in calories and adds a cheesy flavor.
Preheat oven to 400°F (200°C)
Break apart 4 bulbs of garlic and remove the skins from individual cloves
Use a knife to give each garlic clove a light whack to break the skin and peel it off
Place the peeled garlic cloves on aluminum foil
Drizzle olive oil over the garlic, and sprinkle with salt, black pepper, and dry thyme
Fold the aluminum foil to create a pouch for the garlic
Roast the garlic in the preheated oven for 30 to 40 minutes, checking for doneness around 35 minutes
Carefully open the foil pouch to avoid steam burns
Spread the roasted garlic on slices of bread while still hot
Top the garlic spread with feta cheese, capers, and kalamata olives
