Harvest jalapenos, using both red and green ones.
Sterilize jars by boiling them for 10 minutes if at an elevation of 1000 feet or less.
Cut off the ends of the jalapenos and slice them into rings about a quarter of an inch thick.
In a saucepan, combine 1/2 cup white vinegar and 1 cup sugar.
Turn the heat to medium-high and cook the mixture, stirring until it comes to a boil.
Once boiling, reduce the heat to medium-medium low and continue stirring until the sugar dissolves completely.
Add the sliced jalapenos to the saucepan and cook, stirring occasionally, until they turn a vibrant green or red, about 3-4 minutes.
Turn off the heat and let the jalapenos cool for a couple of minutes before transferring them to the jar.
Using a funnel, scoop the jalapenos into the sterilized jar and top with syrup.
Wipe the rim of the jar to remove any sticky residue and seal with a lid.
Let the jar cool to room temperature before refrigerating.
