This delightful condiment has become popular for its unique combination of heat and sweetness, often served with cream cheese on crackers or as a topping for meats. Today, variations can be found across the country, showcasing the versatility of this beloved Southern treat.

Distilled vinegar is often less expensive and works well.
Slice jalapenos into rings, discarding stems.
If sensitive to jalapeno oils, wear latex or nitrile gloves; otherwise, wash hands thoroughly after cutting.
Combine water, sugar, vinegar, celery seeds, and salt in a medium saucepan.
Add sliced jalapenos to the saucepan.
Heat the mixture on high heat and stir until it reaches a rolling boil.
Once boiling, reduce heat to medium-low and let simmer for 15 to 20 minutes.
After 15 minutes, check for color darkening and curling edges of jalapenos to indicate readiness.
Turn off the heat and let the jalapenos cool slightly in the saucepan.
Transfer jalapenos and liquid to a glass jar with a snap-on or screw-on lid.
Refrigerate for at least 24 hours before serving.
