Vegan Tuna Melt

1 can chickpeas, drained and rinsed
1/4 cup red onion, finely chopped
2 tablespoons relish
1/4 cup jalapenos, diced
1 sheet nori, shredded
2 tablespoons nutritional yeast
1/4 cup vegan mayonnaise
1/2 cup vegan cheese shreds
2 tablespoons vegan butter

Open a can of chickpeas and drain them.

Mash the chickpeas in a bowl.

Chop some onions and add them to the mashed chickpeas.

Add a little bit of relish to the mixture.

Chop and add jalapenos (preferably sweet and spicy from Trader Joe's).

Add a sheet of nori to the mixture for a seafood flavor.

Sprinkle nutritional yeast into the mixture.

Add vegan mayonnaise (Follow Your Heart) and mix everything together until combined.

Build the sandwich with the chickpea mixture and vegan cheese.

Heat a skillet on the stove and add vegan butter to it.
