Vegan Tuna Melt

1 tin chickpeas
1 tin sweet corn
1 red onion
1 tablespoon malt vinegar
1/2 teaspoon salt
2-3 tablespoons vegenaise
vegan butter (Flora's dairy free version)
vegan cheese (Sainsbury's own brand)
2 slices bread

Cut the bread into slices.

Chop the red onion into fine slices.

Drain the chickpeas and mash them using a potato masher until no whole chickpeas remain.

Add 1 tablespoon of malt vinegar to the mashed chickpeas.

Mix in the chopped red onion.

Add 1/2 teaspoon of salt to the mixture.

Drain the sweet corn and add about half the tin to the mixture.

Add 2-3 tablespoons of vegenaise to the mixture and mix well with a fork.

Spread vegan butter on both slices of bread.

Spoon the chickpea mixture onto one slice of bread, spreading evenly but not overfilling.

Top with a generous amount of vegan cheese.

Press the other slice of bread on top to compact the sandwich.

Toast the sandwich on a George Foreman grill until golden brown and crispy, checking after a few minutes.

Carefully remove the sandwich from the grill and cut it in half to serve.
