Vegan Tuna Melt

1 cup cashews, blanched and soaked
12 ounces silken tofu
2 tablespoons dijon mustard
1 tablespoon maple syrup
2 tablespoons red wine vinegar
1.5 teaspoons kosher salt
1 can garbanzo beans, rinsed and drained
2 scallions
1 tablespoon caper brine liquid
2 tablespoons capers
1 tablespoon sweet relish
2 tablespoons chopped parsley
1 tablespoon old bay seasoning
a few sprigs of fresh dill
2 tablespoons kelp oil
1 cup classic vegan mayo
2 tablespoons nutritional yeast
1 tablespoon potato starch
1 tablespoon mushroom powder
1 french country loaf

Heat 3 tablespoons extra virgin olive oil in a pan over low heat.

Add 1 tablespoon kelp granules to the oil and cook for roughly 1 minute.

Allow the kelp granules to steep and infuse for 30 minutes.

In a blender, add 1 cup of blanched and soaked cashews, 12 ounces silken tofu, 2 tablespoons dijon mustard, 1 tablespoon maple syrup, 2 tablespoons red wine vinegar, and 1.5 teaspoons kosher salt.

Puree the mixture on high speed until smooth and creamy to make vegan mayo.

Place the vegan mayo in a glass jar, close the lid, and refrigerate to cool and set up.

In a bowl, add 1 can of rinsed and drained garbanzo beans and lightly smash them while also cutting some to create texture.

Thinly slice 2 scallions and add them to the garbanzo beans.

Add 1 tablespoon caper brine liquid to the bowl.

Rough chop 2 tablespoons of capers and add them to the garbanzo beans.

Add 1 tablespoon sweet relish, 2 tablespoons chopped parsley, 1 tablespoon old bay seasoning, and a few sprigs of fresh dill to the mixture.

Add 2 tablespoons kelp oil to the bowl and gently mix to incorporate all ingredients, ensuring the mixture is creamy.

In a separate bowl, combine 1 cup classic vegan mayo, 2 tablespoons nutritional yeast, 1 tablespoon potato starch, and 1 tablespoon mushroom powder, and mix thoroughly.

Slice a thick piece of french country loaf, about half an inch in thickness.

Spread a thick layer of the cheesy custard on the bread.

Heat a heavy pan over medium heat and add a nub of vegan butter until lightly sizzling.

Add the sliced bread topped with cheesy custard to the pan and cook for roughly 2 minutes until the bottom is golden brown and crispy.

Place the toast under a preheated broiler for 1 to 2 minutes until the cheesy custard is amber in color and the edges of the bread are lightly toasted.

Assemble the tuna melt by piling the untuna on the bread, leaving some cheesy custard showing for contrast.
