Traditionally made with leftover pita bread and seasonal vegetables, it reflects the resourcefulness of home cooks. Fattoush is often served at festive occasions and gatherings, celebrated for its fresh flavors and crunchy texture. Today, this dish has gained popularity across the globe, with variations appearing in many Middle Eastern restaurants.

Cut the romaine lettuce very thinly.
Finely chop the mint and parsley.
Chop the scallions.
Pick the leaves off the purslane stems and chop the rest of the veggies including tomatoes, cucumbers, radish, white onion, and jalapeno.
Prepare the dressing by mixing salt, dry mint, red pepper, sumac, pomegranate molasses, juice of 1 lemon, olive oil, and 1 clove of garlic.
Serve with crunchy pita bread, either baked in the oven with olive oil or fried.
