Cut 1/2 cup (1 stick) of cold unsalted butter into tablespoon-sized pieces and add to the dry ingredients in the food processor.
Pulse the mixture six to eight times until the butter is cut into the flour.
Add 2 tablespoons of cold vodka and 3 tablespoons of cold water to the mixture and pulse another six to eight times until combined.
Check the consistency by squeezing a piece of the mixture; if it holds together, it's ready; if not, add a tiny bit more water.
Shape the dough into a rectangle, wrap it in plastic wrap, and refrigerate for at least an hour or up to 48 hours.
Prepare the filling by adding 1 and 1/2 cups fresh blueberries to a saucepan over medium heat.
Add 1 tablespoon unsalted butter, 3 tablespoons brown sugar, 1/8 teaspoon salt, and 1 tablespoon water to the blueberries.
Stir the mixture and cook until the blueberries release their juices and thicken into a jammy texture, about 15 to 20 minutes for fresh blueberries.
Once thickened, move the filling to a bowl to cool completely before using.
Make the egg wash by whisking 1 egg with 2 teaspoons of water and straining it to remove stringy pieces.
Roll out the chilled pie crust into a rectangle on a floured surface.
Cut the rolled-out dough into squares or circles for the hand pies.
Place a spoonful of the cooled blueberry filling in the center of each piece of dough.
Fold the dough over to create a half-moon shape and crimp the edges to seal.
Repeat with the remaining dough and filling, placing the hand pies on a baking sheet lined with parchment paper.
Brush the tops of the hand pies with the egg wash before baking.
Bake the hand pies in an air fryer or oven until golden brown, checking for doneness.
Let the hand pies cool on a wire rack before serving.
