Place a large piece of tin foil in a roasting tray.

Drizzle a little olive oil onto the foil.

Place the fish on top, skin side down.

Bring two sides of the foil together and fold a couple of times to create a sealed parcel.

Bake in an oven preheated to 180°C for 10 to 12 minutes.
