Cut the ends off the red onion and peel it.
Cut the onion in half and slice it into quarter-inch slices.
Place the sliced onions in a bowl and pour hot water over them for about one minute.
Prepare the pickling brine by combining 1 cup of water, 1 cup of red wine vinegar, 1 teaspoon of salt, 1 tablespoon of sugar, and half a dozen black peppercorns in a saucepan.
Add a little bit of garlic to the brine mixture.
Pour boiling water over the onions and let them sit for one minute.
Drain the onions and place them in a jar with a clove of garlic.
Pour the red wine vinegar and water mixture over the onions in the jar, ensuring they are fully submerged.
Seal the jar and let it sit at room temperature for a couple of hours before refrigerating it overnight.
