Sautéed Baby Bok Choy

1 lb baby bok choy
2 tbsp olive oil
2 cloves garlic, minced
1 tsp ginger, minced
1/2 tsp salt
1/4 tsp black pepper
1 tbsp soy sauce (optional)
1 tsp sesame oil (optional)

Rinse the baby bok choy under cold water to remove any dirt or grit.

Trim the ends of the bok choy and cut them in half lengthwise if they are large.

Heat the olive oil in a large skillet over medium heat.

Add the minced garlic and ginger to the skillet and sauté for about 30 seconds until fragrant.

Add the baby bok choy to the skillet, cut side down, and sauté for 2-3 minutes until they start to wilt.

Flip the bok choy and continue to sauté for another 2-3 minutes until tender but still crisp.

Season with salt and black pepper, and add soy sauce and sesame oil if using.

Toss everything together to combine and cook for an additional minute.

Remove from heat and serve immediately.
