Prepare the yeast by mixing 100 milliliters of warm milk, 2 and a quarter teaspoons of yeast, and half a teaspoon of sugar. Set aside for 10 minutes to activate.
Sift 3 cups of all-purpose flour into a bowl and make a well in the center.
Sprinkle 1 and a half teaspoons of salt around the flour, avoiding the well.
Add the activated yeast mixture to the well along with 200 milliliters of lukewarm water.
Use fingertips to fold the flour and salt into the well, mixing until a rough dough forms.
Knead the dough for about 10 minutes until soft, using wet hands and a wet counter.
Place the dough in a bowl rubbed with olive oil, cover with saran wrap and a kitchen towel, and let it rise in a warm area for 30 minutes.
Flatten the dough on a floured surface to about 30 centimeters in size, transferring it to parchment paper or a greased baking pan as needed.
Prepare the egg wash by beating 1 egg with a couple of drops of olive oil.
Cut inclined lines in the dough about 4 centimeters apart, not cutting all the way through.
Brush the dough with the egg wash and sprinkle with sea salt and dry rosemary.
Bake in a preheated oven at 350 degrees Fahrenheit for 15 minutes, then increase to 425 degrees Fahrenheit and bake for another 6 to 8 minutes until golden brown.
