Welcome to Tea Time, today we will make Banana Coffee Muffins.
First, we will make the batter. Take 1 cup of caster sugar and 1 cup of butter and mix them together.
Using an electric beater, beat the butter and sugar until light and fluffy.
Add 2 eggs to the mixture and beat again.
Prepare a coffee concoction by mixing 2 tablespoons of coffee powder with 1 tablespoon of water to make a thick paste.
Add the coffee mixture to the batter and mix well.
Sift in 1 teaspoon of baking powder and fold in the flour gently.
Chop bananas into small pieces and fold them into the mixture last to prevent browning.
Grease the muffin molds or use paper cups for easier demolding.
Fill the molds with the mixture and add some banana pieces on top.
Preheat the oven to 180 degrees Celsius and bake for 20 to 25 minutes.
Once baked, let them cool before serving.
