Start by making a flax egg by mixing 1 tablespoon of flax meal with 3 tablespoons of water. Stir and let it sit while preparing other ingredients.
In a heat-proof bowl, add 2 tablespoons of vegan butter and melt it using a double boiler method over simmering water or microwave for about 20 seconds.
Once melted, add 1/2 cup of coconut sugar, 1 teaspoon of vanilla extract, and a pinch of salt to the melted butter and mix well.
Add the prepared flax egg to the bowl and mix until combined.
In a separate bowl, combine 1/2 cup of spelt flour, 1/4 teaspoon of baking powder, and 1/4 teaspoon of baking soda. Sift the dry ingredients into the wet mixture.
Mix the ingredients until about 80% combined, leaving some white spots in the mixture.
Fold in 1/4 cup of coconut flakes and 1/4 cup of macadamia nuts gently into the dough.
Prepare a parchment-lined baking tray and scoop the dough into 8 parts using an ice cream scoop or a tablespoon, placing them on the tray without shaping them perfectly.
Top each cookie with extra coconut flakes and macadamia nuts for decoration, if desired.
Bake the cookies at 350°F (180°C) for 8 to 10 minutes or until golden brown.
Let the cookies sit on the baking tray for a few minutes to cool before transferring them to a cooling rack.
