Preheat the oven to 350 degrees Fahrenheit.

Place 3 whole ripe plantains on a baking dish and put them in the oven.

Bake the plantains for about 30 minutes until cooked and soft.

In a bowl, combine minced beef with chopped onions, dried oregano, freshly minced garlic, and pimento peppers.

Run your finger underneath the plantain skin to release the plantain from the peel without removing it completely.
