Shred the cabbage and cut up bell peppers, scotch bonnet peppers, and scallions.
In a skillet, sauté the bell peppers and scallions.
Add shredded cabbage to the skillet and season it to taste.
Cover the skillet to allow the cabbage to shrink a little.
Add pre-cooked aki to the cabbage and sauté together.
Add spinach at the end and cover the pot for a minute before turning off the heat.
Prepare the plantains by using turn plantains, which are not fully ripe.
Heat oil in a pan and fry the plantains until golden brown on each side.
Remove the fried plantains and press them into a lemon squeezer while they are still hot to create a cup shape.
Trim the edges of the pressed plantains with scissors for a neat appearance.
Fill the plantain cups with the prepared filling of cabbage, aki, and spinach.
