Preheat the oven to 425°F (220°C).
Prepare a large cookie sheet lined with parchment paper.
Make an egg wash by combining 1 egg with about 1 tablespoon of water and whisking until combined.
Open the puff pastry, which comes on parchment paper, and roll it out if necessary.
Cut the pastry into six equal squares by cutting lengthwise and then crosswise.
Place four of the squares onto the cookie sheet.
Add about 1 tablespoon of strawberry preserves to the center of each square, spreading it out a little without overfilling.
Brush a little egg wash around the edges of each pastry square to help seal them.
Fold each pastry square over to form a triangle and press the edges to seal, ensuring they are tightly closed.
Use a fork to crimp the edges of each turnover to ensure they are sealed properly.
Repeat the filling and sealing process for the remaining two pastry squares.
Brush the tops of all the turnovers with the egg wash to ensure they get golden and flaky.
Bake in the oven for about 18 to 22 minutes until golden and flaky.
While the turnovers are baking, prepare a glaze by whisking together 3/4 cup of powdered sugar, 1 teaspoon of vanilla extract, and water, adding water a tablespoon at a time until the desired consistency is reached.
Once the turnovers are done baking, let them cool for about 5 minutes before glazing.
Drizzle the glaze over the turnovers, using a piping bag or just a spoon for a more casual look.
