Honey is a natural sweetener, while brown sugar is often less expensive.

Wash the lemons using hot water and friction to clean them thoroughly.

Peel the lemons using a vegetable peeler, trying to only remove the yellow part of the skin.

In a bowl, combine the lemon peels with 1 1/4 cups of sugar and mix until the peels are well coated.

Let the mixture sit for 2 to 12 hours to allow the sugar to release the oils from the peels.

After 12 hours, bring 2 cups of water to a simmer and add in the lemon peels.

Simmer the peels for 5 minutes, being careful not to oversimmer to avoid bitterness.

Remove from heat and stir in 3 cups of cool water.

Juice the lemons, straining out any seeds or pulp, and add the juice to the cooled mixture.

Pour the lemonade into a bottle or pitcher and chill for 3 to 4 hours before serving over ice.
