Make the Fajita Marinade by peeling and finely grating the garlic, squeezing the lime juice into a mixing bowl, and adding the rest of the marinade ingredients to form a smooth mixture.

Prepare the Fajita Vegetables by trimming, halving, coring, and slicing the peppers; peeling, halving, and slicing the onion; and slicing the mushrooms.

Add the mushrooms to a bowl, pour over half the marinade, and toss to coat. Transfer to a baking tray and roast for 30 minutes, stirring halfway through.

In the meantime, toss the peppers and onions with the remaining marinade and roast on a separate tray for 20-30 minutes, stirring halfway through.

To make the Fajita Samosas, lay a tortilla on a clean work surface, spoon one-fifth of the fajita vegetables and one-fifth of the dairy-free cheese in the center, and shape into a triangle.

Brush the edges of the tortilla with water, fold to form a triangle, and place on a lined baking tray, fold side down. Repeat with remaining ingredients.
