1 cup of cooked quinoa or brown rice
1 cup of beets / about 3 small 2 medium or 1 large beets shredded
1 onion diced
4 cloves of garlic minced
1 cup of mushrooms of choice chopped
1 can of black beans
1/2 cup or more of almond meal / oats / buckwheat flour
1 1/2 tsp of toasted and ground fennel seeds
1 tsp of mustard powder
1 flax egg ( 1tbs of flaxseed meal and 2.5tbs of water ) or 2 Tbs of almond butter or 1 egg if not vegan
optional 2 tbs soy or tamari sauce and 1 tbs miso
salt and pepper to taste

Put your rice or quinoa on to cook while you prepare the rest of the ingredients. Cook 1 cup of quinoa in 2.5 cups of water and simmer covered on low heat.

Peel, quarter, and shred your beets using a food processor or box grater.

Preheat a pan and toast your fennel seeds, then grind them and set aside.

In the hot pan, add your mushrooms, onion, garlic, and shredded beets and cook down until soft, about 10 to 15 minutes.

Add the cooked mixture and the rest of the ingredients to a food processor and process until well combined but still with some texture. If the mixture is too wet, add some oats or buckwheat flour until you can easily form a burger.

Form your burgers and arrange them on some baking paper, then stick them in the fridge overnight.

You can pan-fry them in some oil for about 5 to 6 minutes on each side on medium heat, or bake them at 150°C for about 30 minutes, flipping halfway. A combination of baking and frying can also be used for a crispier result.
