Put flour in a bowl.

Add yeast and sugar to the flour and mix.

Make a well in the center and add milk, eggs, and melted butter; mix with a wooden spoon until thick.

When too thick to mix, set the wooden spoon aside and knead the dough in the bowl to form one big dough.

Transfer the dough onto a work surface and knead until smooth.

Spread the dough a bit on the work surface and knead in grated lemon zest until mixed in.

Put the dough back into the bowl, cover with cling film, and let it rise for about 1 hour or until doubled in size.

For the plum sauce, put plums in a pot, add orange juice, sprinkle in sugar, and mix.

Put the pot on the stove and let it boil until the plums are soft.

Remove from heat, add 1 teaspoon of cinnamon powder, and blend with a hand blender until smooth; set aside.

For the custard, combine milk and double cream in a pot and heat until hot but not boiling.

In a bowl, add eggs, vanilla extract, 2 tablespoons of flour, and sugar; whisk together.

Slowly pour the hot milk into the egg mixture while whisking continuously to avoid cooking the eggs.

Once combined, pour the mixture back into the pot and whisk on heat until thick enough to coat the back of a wooden spoon; set aside.

When the dough has risen, knock the air out and weigh it, then divide by 12 and shape into balls.

In a large pot, add milk, sugar, and butter; heat to melt the butter and dissolve the sugar, then boil for about 5 minutes and set aside.

Add the dough balls into the pot and leave uncovered to rise.

Once risen, cover and cook on medium heat for about 25 minutes.

After 25 minutes, remove the lid and cook for an additional 5 minutes to brown the bottom.

Check if ready by pressing gently on top; if it springs back, it's cooked.

Put the pot on a cooling rack, use a spatula to remove a bun, and serve on a plate with custard and plum sauce.
