Pumpkin Crunch Bread

Cultural Context

Pumpkin bread has its roots in early American cooking, often made during the fall harvest season. It reflects the abundance of pumpkins and has become a staple in many households, especially around Thanksgiving. The addition of cream cheese creates a delightful contrast in texture and flavor, making it a favorite for gatherings. Today, variations abound, with some incorporating chocolate chips or spices, but the essence of pumpkin bread remains a beloved comfort food.

1

In a large bowl, add 1 box of spice cake mix and 15 oz of pumpkin puree; mix until combined.

2

For the crumbly topping, in another bowl, combine 1 cup of all-purpose flour, 1/3 cup of granulated sugar, and 2 tsp of ground cinnamon.

3

Add 1 stick of cold unsalted butter to the flour mixture and mix with hands until crumbly; refrigerate until ready to use.

4

Pour half of the pumpkin bread batter into a 9x5 loaf pan lined with parchment paper; spread evenly.

5

Add half of the crumbly topping over the batter in the loaf pan.

6

Pour the remaining batter on top of the crumbly topping, spreading carefully to avoid mixing.

7

Add the rest of the crumbly topping on top of the second layer of batter.

8

Bake in a preheated oven at 350°F for about 50 minutes.

9

For the second version, combine 1/2 cup of sour cream (or 5 oz of plain Greek yogurt), 1 and 1/4 cups of light brown sugar, 1 cup of pumpkin puree, and 2 large eggs in a bowl; mix until combined.

10

Add 2 tsp of vanilla extract and 5 tbsp of cooking oil; mix well.

11

In a separate bowl, sift together 2 cups of all-purpose flour, 1 tsp of baking soda, 1 and 1/2 tsp of baking powder, 1 tsp of salt, 1 tsp of pumpkin pie spice, and 1 and 1/2 tsp of ground cinnamon.

12

Combine the dry ingredients with the wet ingredients using a wooden spoon until well mixed.

13

In a 9x5 loaf pan lined with parchment paper, pour half of this batter; spread evenly.

14

Make the crumbly topping by mixing 1 cup of all-purpose flour, 1 tsp of pumpkin pie spice, a little over 1 tsp of ground cinnamon, 1/3 cup of light brown sugar, and a pinch of salt.

15

Add 1 stick of unsalted butter and mix until crumbly.

16

Add half of the crumbly topping over the batter in the loaf pan, then pour the remaining batter on top.
