In a large bowl, add 1 box of spice cake mix and 15 oz of pumpkin puree; mix until combined.
For the crumbly topping, in another bowl, combine 1 cup of all-purpose flour, 1/3 cup of granulated sugar, and 2 tsp of ground cinnamon.
Add 1 stick of cold unsalted butter to the flour mixture and mix with hands until crumbly; refrigerate until ready to use.
Pour half of the pumpkin bread batter into a 9x5 loaf pan lined with parchment paper; spread evenly.
Add half of the crumbly topping over the batter in the loaf pan.
Pour the remaining batter on top of the crumbly topping, spreading carefully to avoid mixing.
Add the rest of the crumbly topping on top of the second layer of batter.
Bake in a preheated oven at 350°F for about 50 minutes.
For the second version, combine 1/2 cup of sour cream (or 5 oz of plain Greek yogurt), 1 and 1/4 cups of light brown sugar, 1 cup of pumpkin puree, and 2 large eggs in a bowl; mix until combined.
Add 2 tsp of vanilla extract and 5 tbsp of cooking oil; mix well.
In a separate bowl, sift together 2 cups of all-purpose flour, 1 tsp of baking soda, 1 and 1/2 tsp of baking powder, 1 tsp of salt, 1 tsp of pumpkin pie spice, and 1 and 1/2 tsp of ground cinnamon.
Combine the dry ingredients with the wet ingredients using a wooden spoon until well mixed.
In a 9x5 loaf pan lined with parchment paper, pour half of this batter; spread evenly.
Make the crumbly topping by mixing 1 cup of all-purpose flour, 1 tsp of pumpkin pie spice, a little over 1 tsp of ground cinnamon, 1/3 cup of light brown sugar, and a pinch of salt.
Add 1 stick of unsalted butter and mix until crumbly.
Add half of the crumbly topping over the batter in the loaf pan, then pour the remaining batter on top.
Add the rest of the crumbly topping on top of the second layer of batter.
Bake in a preheated oven at 350°F for about 1 hour and 10 minutes.
Let the loaves cool for about 15 minutes in the pan before removing them to cool completely on a wire rack.
Slice the cooled loaves to serve.
