Chicken Gumbo

1 brown onion
2 banana chilies
1 cup okra
3 tablespoons oil
500 grams diced chicken breast
2 crushed garlic cloves
1 tablespoon paprika
1 teaspoon ground cumin
1 teaspoon dried thyme
1/4 teaspoon ground chili
1 can chopped tomatoes (400 grams)
1 cup long grain rice
3 bay leaves
3 cups chicken stock

Slice the brown onion through the middle and coarsely chop it.

Cut the stems off the banana chilies, remove the seeds, and chop them up.

Slice the okra into pieces.

In a pot on medium heat, add 3 tablespoons of oil.

Add 500 grams of diced chicken breast to the pot and brown it.

Once the chicken is browned, add the chopped onion and banana chilies to the pot and sauté until soft.

Add 2 crushed garlic cloves, 1 tablespoon of paprika, 1 teaspoon of ground cumin, 1 teaspoon of dried thyme, and 1/4 teaspoon of ground chili to the pot.

Stir in 1 can of chopped tomatoes and season with a pinch of salt and cracked pepper.

Add 1 cup of long grain rice and 3 bay leaves to the pot.

Pour in 3 cups of chicken stock and mix well.

Cover the pot and let it cook for 25 to 30 minutes on low to medium heat.

After 20 minutes, add the sliced okra and mix it in.

Cover the pot again and cook for an additional 5 minutes on low heat.
