Zucchini can be a lower-calorie alternative, while regular bananas are more affordable.
Peel the plantains by cutting off the top and bottom, making slits on either side, and removing the skin under running water.
Cut the plantains into 1-inch diagonal pieces.
Heat vegetable oil on medium to high flame.
Fry the plantain pieces until lightly brown, then turn them to brown the other side.
Remove the fried plantains from the oil and flatten them using a plantain press or the flat side of a large knife, or the bottom of a plate.
Mix salt and water in a bowl.
Place the flattened plantains in the salt water for 30 seconds, being careful not to leave them too long to avoid them becoming too soft.
Drain the excess water from the plantains using a paper towel.
Refry the plantains on both sides until golden brown.
