Traditionally made in a pot over an open flame, this dish symbolizes the resourcefulness of home cooks. Today, it's commonly baked in ovens and enjoyed across the Caribbean and beyond, often served alongside curries or stews.

Flaxseed meal is a vegan alternative for binding.
Mix 50g egg, 25g sugar, and 3g yeast in a bowl.
Add 120g milk and mix well.
Stir in 250g bread flour and 3g salt to form a dough.
Knead the dough by hand until smooth, about 10 minutes.
Wrap 28g unsalted butter in the dough and knead it in.
Let the dough ferment for about 1 hour.
Deflate the dough and fold it twice to make a round shape.
Sprinkle flour to prevent sticking and roll out the dough into a large round sheet.
Transfer the dough to a baking tray lined with parchment paper.
Make 4 cuts into 8 parts, then cut each piece into a diamond shape.
Cover with plastic wrap and let proof for about 40 minutes.
Brush the top with beaten egg.
Bake in a preheated oven at 180°C (360°F) for 13 minutes.
