Originating from the Sichuan province of China, Sichuan Hot Chili Oil is a staple condiment known for its bold, spicy flavor. It is often used to enhance the taste of various dishes, from noodles to dumplings. The oil captures the essence of Sichuan cuisine, which is celebrated for its complex flavors and aromatic spices. Today, this chili oil has gained popularity worldwide, often found in Asian restaurants and home kitchens alike.

Start with a large pot (at least 6 quarts) and add 50 grams of scallions cut into one-inch pieces.
Add 75 grams of sliced ginger (unpeeled) to the pot.
Crush 50 grams of garlic (about 6-8 cloves) and add to the pot for more surface area exposure.
In a bowl, combine 2 whole nutmeg cloves, 10 grams of whole cloves, 10 grams of fennel seeds, and 25 grams of cumin seeds.
Add 10 grams of allspice berries, 2 grams of bay leaves, and 3 whole cinnamon sticks to the bowl.
Mix in 30 grams of sugar to balance the flavors.
Add 20 grams of dried orange peel and 20 grams of crushed gardenia fruit to the mixture.
Incorporate 10 grams of star anise, 10 grams of lesser galangal, and 10 grams of black cardamom pods.
Add 10 grams of ammom seeds and 10 grams of sand ginger to the pot.
Add 25 grams of red Sichuan peppercorns and 10 grams of green Sichuan peppercorns to the mixture.
Prepare 150 grams of mixed chilies (erjing tau and lantern) by coarsely grinding them in a food processor.
Combine all ingredients in the large pot and heat over medium heat until the oil is infused with flavors.
