In a large bowl, mix 1 large diced onion and 1 kilo of chopped tomatoes. Drain any excess juice from the tomatoes.

Add 1/2 cup of coriander, 1 jalapeno (finely diced), 4 cloves of garlic (finely diced), 1 teaspoon of chili powder, 1 tablespoon of cumin, 2 tablespoons of olive oil, juice of 1 lemon, and salt and pepper to taste. Mix well and taste to correct seasoning.

Refrigerate the mixture overnight to let the flavors meld.

In a glass bowl, combine steak with 1 thinly sliced onion, juice of 2-3 oranges, and 1/4 cup of olive oil. Add cumin powder and chopped coriander. Mix and refrigerate overnight.

After marinating, fry the steak pieces on medium-high heat for about 5-7 minutes on each side.

In a pot, add 450 grams of beans with about 2-2.5 cups of water. Bring to a boil, then cover and let simmer for about 2-2.5 hours, checking occasionally.

In a pan, heat oil and fry 1/2 chopped onion until translucent.

Add the cooked beans and 1/4 cup of water. Mash the beans with a potato masher, adding salt to taste and 1/2 cup of grated cheese. Keep heated and reserved.

Fry the plantains until golden brown.

Assemble the plate with tortillas, fried plantains, chorizo, refried beans, chimol, guacamole, and carne asada.
