Open all cans of diced tomatoes.
Melt a little bit of butter in a large pot.
Add 6 cups of celery and 4 cups of onions to the pot; sauté until softened.
Add the diced tomatoes to the pot.
Pour in 2 cups of vinegar and stir to combine.
Add 5 cups of sugar to the mixture in the pot.
Add 2 and 2/3 tablespoons of mustard seed and 1 tablespoon of salt.
Stir the mixture to combine all ingredients.
Bring the mixture to a boil and let it cook for 20 minutes, stirring occasionally.
Check the consistency after 20 minutes; if desired, cook longer for a thicker sauce.
Prepare jars by washing them and keeping them warm in the oven.
Fill the jars with the chili sauce, leaving a half-inch headspace.
Wipe the rims of the jars clean before sealing.
