Preheat the oven to 350°F.
In a food processor, combine 1 cup of all-purpose flour and 3/4 cup of brown sugar.
Add 2 oz of softened cream cheese and a pinch of salt to the food processor.
Pulse the mixture until it resembles wet sand and clumps together.
Transfer the mixture to a baking pan and press it down evenly using parchment paper and a flat surface.
Par bake the crust in the oven for 10 minutes until it takes on a little color and is slightly set.
Remove the crust from the oven and ensure it is still wet on top.
Chop half of the pecans roughly and set aside.
In a large mixing bowl, combine 3/4 cup of honey, 3/4 cup of brown sugar, and 2 tbsp of melted butter.
Add a pinch of salt, 2 eggs, and 2 tbsp of bourbon to the mixture and stir to combine.
Add 4 oz of chopped dark chocolate and the chopped pecans to the bowl and mix until evenly distributed.
Pour the filling over the par-baked crust and spread it evenly.
Bake in the oven at 350°F for 30 minutes until the filling is puffed but still slightly squishy in the center.
Remove from the oven and let cool to room temperature before refrigerating for about 2 hours to firm up.
Use a sharp serrated knife to cut into bars.
