Mashed Potatoes

Cultural Context

Mashed potatoes are a staple side dish in American cuisine, often served during family gatherings, holidays, and comfort food meals. They are typically made with simple ingredients and can be customized with various add-ins like garlic or cheese. This dish has roots in European cooking, particularly in the British Isles, where potatoes were first cultivated.

1

Wash, peel, and cut the yukon gold potatoes into small, even pieces.

2

Add the potatoes to a pot or dutch oven and cover them with cold water, 1-2 inches above the potatoes.

3

Add 2 tablespoons of salt to the water and bring to a boil over high heat.

4

Once boiling, cook the potatoes for 15-20 minutes.

5

After 15 minutes, if the potatoes are almost done, add 12 ounces of riced cauliflower and boil for an additional 5-6 minutes until both are tender.

6

Drain the potatoes and cauliflower.

7

In a saucepan over low heat, melt 1 tablespoon of light butter.

8

Crush 3 cloves of garlic and add them to the melted butter, cooking for about 1 minute without burning.

9

In a bowl, mix 1/2 cup of zero fat greek yogurt with 1 1/2 tablespoons of ranch seasoning to make the sauce.

10

Add the drained potatoes and cauliflower back to the pot, along with the garlic butter and the ranch yogurt sauce.

11

Mash the potatoes with a potato masher, mixing lightly to avoid over whipping and making them gummy.
