1

Measure flour and salt into a large mixing bowl.

2

Measure water into a large measuring cup. Add eggs to water and mix with a fork.

3

Gradually add water/egg mixture to flour while stirring with the fork to evenly moisten all ingredients.

4

Stir until ingredients come together.

5

Dump onto a clean hard surface to knead.

6

Knead for approximately 1 minute or until dough is smooth.

7

If dough appears dry, add small amounts of extra water. If too sticky, add more flour.

8

Round the dough and coat with flour. Place on the table and cover with plastic wrap or an inverted bowl.

9

Let rest for 10-15 minutes before using.

10

Rinse potatoes, place in pot with enough water to cover. Bring to a boil and simmer for about 30 minutes or until fork tender. Drain.

11

Let potatoes cool enough until easy to handle. Peel and rice potatoes into a large bowl.

12

Cook onions in the butter until soft, but not browned. Add to potatoes with the remaining ingredients.

13

Mix well, cover and refrigerate until firm.
