Wash the small batavia lettuce with plenty of water.
Place the washed lettuce in a container and cover it with water.
Add half a cup of white vinegar to the water and let it rest for 10 minutes to disinfect.
Peel half a carrot and wash it with plenty of water.
Grate the carrot using a grater and reserve it.
Wash and disinfect a small cucumber.
Grate the cucumber using a grater and reserve it.
Drain the lettuce and cut it into thin strips.
In a salad bowl, combine the lettuce, grated carrot, and grated cucumber.
Mix all the ingredients until well integrated.
In another container, prepare the dressing by adding four tablespoons of extra virgin olive oil, two teaspoons of balsamic vinegar, one teaspoon of mustard, the juice of two lemons, a pinch of salt, and one tablespoon of honey.
Beat the dressing until integrated and set aside until serving.
Serve the salad and accompany it with the dressing.
