Easy Keto Mint Patties and More Minty Treats (Nut Free and Gluten Free)

Instructions
- 1In a mixing bowl, combine almond flour, shredded coconut, melted coconut oil, sweetener, peppermint extract, vanilla extract, and salt.
- 2Mix until a dough forms. If the mixture is too dry, add a little more coconut oil.
- 3Shape the dough into small patties, about 1 inch in diameter.
- 4Place the patties on a parchment-lined baking sheet and refrigerate for about 30 minutes to firm up.
- 5While the patties are chilling, melt the dark chocolate chips in a microwave or double boiler until smooth.
- 6Remove the patties from the refrigerator and dip each one into the melted chocolate, ensuring they are fully coated.
- 7Return the chocolate-coated patties to the parchment-lined baking sheet.
- 8Refrigerate again for about 15-20 minutes until the chocolate hardens.
- 9Serve chilled and enjoy your keto mint patties!
