Place the stuffed dates in the freezer for 10 minutes.
Add 2 cups of dark chocolate chips to a bowl.
Add 1 tablespoon of coconut oil to the chocolate chips.
Melt the chocolate and coconut oil in 30-second intervals until smooth.
Dip the dates into the melted chocolate until fully coated.
Top the chocolate-coated dates with chopped peanuts and a sprinkle of flaky sea salt.
Place the dipped dates back in the freezer for 10 minutes to set.
