Mix flour and salt in a mixing bowl.
Add olive oil to the flour and salt mixture.
Dissolve yeast in warm water and add one teaspoon of sugar, then mix this into the flour.
Knead the dough by hand until it is a bit sticky and moist.
Place the dough in a lightly oiled bowl, cover it, and let it rise in a warm place for about 30 to 45 minutes until doubled in size.
Prepare a large baking tray with parchment paper.
Shape the dough into a large flatbread on the baking tray, or divide it into smaller pieces for individual flatbreads.
Press the dough flat with fingers until it is about 1 to 2 cm thick.
Cover the shaped dough and let it rest for 10 to 15 minutes in a warm place.
Prepare the brushing mixture by combining egg yolk, one tablespoon of milk, one tablespoon of olive oil, and one teaspoon of sugar.
Brush the risen dough with the egg yolk mixture and create a pattern on the surface with your fingers.
Sprinkle sesame seeds or black cumin on top of the dough.
Bake in the oven until golden brown, then wrap the bread in a clean kitchen towel and let it sit for about 10 minutes.
